3 medium zucchinis, sliced into rounds
1 teaspoon salt (for sweating zucchini)
1/2 cup sour cream
4 tablespoons melted butter
2 cups sharp cheddar cheese, shredded
1/2 cup Panko breadcrumbs
1 teaspoon garlic powder
1/4 teaspoon black pepper
Instructions
Toss zucchini slices with salt and let sit for 20 minutes; pat dry thoroughly.
Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
In a large bowl, mix sour cream, melted butter, and garlic powder until smooth.
Stir in 1.5 cups of shredded cheese and 2 tablespoons of breadcrumbs.
Fold in the dried zucchini slices until evenly coated.
Transfer the mixture to the baking dish and top with remaining cheese and breadcrumbs.
