A comforting, layered Tex-Mex bake featuring seasoned ground beef, corn tortillas, and a melted blend of Monterey Jack and Cheddar cheeses.

  • 1 lb ground beef
  • 12 corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded sharp Cheddar cheese
  • 1 cup tomato sauce
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375F and grease a 9×13 inch baking dish.
  2. Brown the ground beef in a skillet over medium-high heat until cooked through. Drain excess fat.
  3. Stir in cumin, smoked paprika, garlic powder, and tomato sauce. Simmer for 5 minutes until thickened.
  4. Layer corn tortillas at the bottom of the dish, slightly overlapping.
  5. Spread one-third of the beef mixture over the tortillas.
  6. Sprinkle a layer of Monterey Jack and Cheddar cheese over the beef.
  7. Repeat the layers of tortillas, beef, and cheese two more times, ending with cheese on top.
  8. Bake for 20-25 minutes until cheese is bubbly and golden brown.
  9. Let rest for 10 minutes before slicing and serving.
