  • 4 Bolillo rolls, halved
  • 2 cups refried beans, warmed
  • 2 cups Oaxaca cheese, shredded or sliced
  • 2 tbsp unsalted butter
  • 1 cup pico de gallo
  • Optional: Sliced avocado

Instructions

  1. Slice bolillo rolls in half lengthwise.
  2. Butter the cut sides of the rolls.
  3. Toast the bread in a skillet over medium heat until golden brown.
  4. Spread a thick layer of warmed refried beans on each roll.
  5. Top with a generous amount of Oaxaca cheese.
  6. Broil in the oven for 2-3 minutes until cheese is bubbly.
  7. Garnish with fresh pico de gallo and serve immediately.
