A rich, deeply flavorful slow-cooked beef stew designed for tacos. Served with a traditional dipping consomé and corn tortillas.

Ingredients

  • 3 lbs Beef Chuck Roast, cubed
  • 5 Guajillo chilies, stemmed and seeded
  • 3 Ancho chilies, stemmed and seeded
  • 1/4 cup Apple Cider Vinegar
  • 6 cloves Garlic, minced
  • 1 tbsp Dried Oregano
  • 1 tsp Ground Cumin
  • 2 tbsp Vegetable Oil
  • Salt and Black Pepper to taste
  • 2 cups Beef Broth (optional)

Instructions

  1. Season beef with salt and pepper, then sear in oil until browned.
  2. Soak dried chilies in hot water for 15 minutes.
  3. Blend soaked chilies, garlic, vinegar, oregano, and cumin into a smooth paste.
  4. Place seared beef in slow cooker and cover with the chili paste.
  5. Cook on LOW for 8 to 10 hours until beef is tender.
  6. Shred the meat and strain the cooking liquid to create consomé.
